Competitive struggle at the alcohol market has become very keen nowadays and it has moved from the sphere of price reduction and protection to the improvement of quality. Within the framework of the general program of handling this priority task we have established Central laboratory that introduces the latest methods of quality control.
Besides everyday routine control of produce according to physical-chemical parameters we hold taste tests of alcohol and alcoholic beverages at the plants on regular basis. Every month the taste panel of the enterprise holds blind tastings of alcohol and alcoholic beverages produced by our affiliates and our competitors. In recent years 80% of main technological facilities have been renewed.
Production of wine, Champagne and low-alcoholic carbonated drinks
In December 2000 we started the line for processing and bottling of still, sparkling and champagne wines, low-alcoholic carbonated drinks like “Gin-Tonic”, which is completed with modern high-production equipment. For production of wines we use high quality wine material from Italy, Moldova and Krasnodar Territory of Russia. Quality control covers all stages of production cycle beginning with careful selection of raw material with our winemakers being present at the place of shipment.
Alcohol production
For alcohol production JSC “Tatspirtprom” uses grain grown in Tatarstan and outside it. At four plants the processing of raw material is carried out according to the traditional technology of high-temperature cooking. And at the other four plants the technology of low-temperature cooking at atmospheric pressure is introduced. Starch saccharification is made with the use of modern home and foreign-made enzymes. There are two methods of fermentation – batch method and continuous one. For mash fermentation at each plant we use specially selected yeast strains. Rectification units have from 5 to 7 columns that makes it possible to purify alcohol from impurities and to reduce the amount of the latter to the level when they cannot be detected by gas chromatography method. The alcohol of the enterprise almost doesnot contain aldehydes and esters, the content of methanol is 10-100 times less than allowed by the standard GOST R 51652-2000 for “De Luxe” alcohol, the content of fusel oils is 1.5-10 times lower. Such results are achieved due to the introduction of inner standard of quality of “Tatspirtprom”, the requirements of which are far more stringent than those of the Russian one. All the production stages are subject to strict laboratory control. Three of eight plants producing fodder yeast from stillage work in the structure of JSC “Tatspirtprom”.
Production of alcoholic beverages
For vodka and alcoholic beverages production we use our own alcohol. Moreover each liqueur and vodka plant uses the alcohol of only one certain spirit plant. Water for beverages undergoes softening and multiple purification. Activated charcoal of different kinds used for treatment of alcohol-water mixture contributes to the production of beverages of the highest quality. When producing elite beverages we use final “silver” filtration.
